Of them PULLUZYME 750 was chosen as a reagent for hydrolysis of raw starch granules from different botanical species. The obtained results suggest that high amylose corn starch and native potato starch are more resistant to pullulanase action than wheat starch which under the action of this enzyme becomes slightly degraded.
